We invited the students to develop interview guides andinterview local stakeholders in the community and to report the information they collected in anessay that answered the question, “What is the problem with the food system in Phelps County,Missouri?” [21].The current article describes our work as part of a design course entitled, “5605 EnvironmentalEngineering Design”, offered at the Missouri University of Science and Technology. Details ofthis course syllabus, teaching modules, and student feedback have been described previously[21].
