Manufacturing for Authentic Digital Food Design Solutions1. IntroductionEntertainment as a communication and experimental platform can be effectively applied forintroducing students to social issues related to food equity, nutrition, and security in classroomlearning environments. These issues are characterized by the lack of consistent access to enoughfood for an active, healthy life. Educational projects at the intersection of food and entertainmenthas the potential to raise awareness about social issues and encourage students to creatively thinkabout innovative solutions using digital entertainment tools and human-centered designmethodologies. This paper presents the results of our exploration at the intersection of food

DBT curricular experiences provide acontext for students to practice critical design skills and an opportunity for students to learn deeplessons about the nature of the engineering design process, including project and teammanagement [2, 4].Additive manufacturing (also referred to as 3D printing) has become an integral part ofengineering design and lab courses in K-12 and higher education. Low-cost and readily available3D printers allow prototype manufacturing and testing which is otherwise difficult to incorporateusing traditional, subtractive manufacturing methods in courses. 3D printers have great potentialbeyond simply serving as a prototyping tool. The objective of our work is to develop, implement, and

laboratory experiment, but italso has disadvantages, namely students have less class time to learn the fundamentals of twovast fields of study—statistics and measurement.Initially, the content of the IDE’s Data Analysis course was organized in series, focusing onmeasurement topics first and statistical concepts second. This sequential model had twomajor disadvantages. First, because the measurement and data acquisition content wasconcentrated at the start of the semester, many students struggled to remember what they“learned” in the first part of the class when they completed their culminating project later inthe semester, in which they designed their own experiment and then collected and analyzedtheir own data. This phenomenon illustrated that

They help to prepare students for their future careers byexposing them to the safety training, tools, equipment, and processes that they will encounter intheir future professional engineering practice.Since 2000, there have been reported research on exploring virtual laboratory in engineering andscience. A virtual engineering laboratory is presented in [3] for hybrid electric vehiclestarter/alternator experimentation. A virtual laboratory environment is developed in [4] for anelectronic circuits course. Using interactive TV and the internet, Gurocak [5] created a newapproach for distance delivery of a Manufacturing Automation laboratory course. Compared

implementations use aspects of game design to improve student’sconfidence and in turn their academic performance [9]. A potential concern of an overly difficultescape room is a decrease in student’s confidence to succeed [10]. Although setting challengingproximal goals is also useful in developing self-efficacy [11]. One goal of this escape room wasto provide an additional opportunity for students to practice skills and use equipment before theybegin an open-ended project at an appropriate challenge level [12]. Since self-efficacy (i.e., task-specific and situational confidence) can be increased with authentic mastery experiences [11], theescape room provides an opportunity to practice or demonstrate mastery of laboratory skills. The escape room in

Due to space limitations, limited equipment, staff, and safety requirementswithin the laboratory, relevant experiments were usually conducted in groups of 3~4 students ata time. This infrastructure gave each student minimal hands-on experience each week, perhaps acouple of minutes at maximum. The lack of hands-on experience

Spatial visualization or reasoning skills are definedas “visualizing three-dimensional objects and perceiving what they will look like from differentviewpoints or what they would look like if they were rotated or transformed in space” (Sorby etal., 2013). emerging state-of-the-art geospatial technology and 3D data analytics.Evolving geospatial industry labor markets are challenging the traditional skillsets developed atconventional S/G programs at colleges. Yet, higher education graduates may still lack decisionmaking and project application skills, and most importantly, the ability to apply the body ofknowledge from their academic training in college courses to solve real-world problems andmeet the skill challenges of the Fourth Industrial Revolution (4IR).To bridge the gap between theory and application of these relevant technologies for industry-ready graduates, hands-on exercises are developed and will be incorporated in a 300-levelphotogrammetry course for SET and Civil Engineering majors

submission. The final project (big open circle) requires afull-length report without peer review or revision. All labs require the completion of prelab reading and pre-lab quiz on Canvas before starting. The pre-labs and homework assignments take up 15% of the course grade. After each lab, studentsturn in a post-lab log sheet, which is more like a ‘structured lab notebook’ with required dataanalysis and interpretation but not to be graded for writing quality. I use the post-lab log sheet asan assessment tool for the content knowledge of the lab, and the log sheets are worth 20% of thecourse grade. Students do not need to write a formal lab report for each lab. A formal lab reportis assigned for each module of the course, each worth 15% of the

importance of relying on real-world behavior to guide understandingand engineering design. One of the guiding principles for the design of lab activities for this project was that lab activitiesare most effective if they align closely with concepts and principles taught in class. In addition, lab activities should allow students to visualize, experience, and clarify confusing concepts. Tothis end, equipment should be as simple as possible so that students don’t get lost in aspects ofthe experiment that are not at the core of the phenomena studied. Unnecessary programs, gad-gets, tools, or assembly should be avoided when possible. Further, sufficient equipment needs tobe provided so that students can all conduct experiments first-hand, rather than

outcomes of the instructional design phase are clear learning objectives, clear ways toassess students' learning, and possible pedagogical approaches. Regarding the latter, we mustemphasize that virtual labs can be adopted with any pedagogical approach, includingdemonstrations, simulations, project- and problem-based learning, and inquiry-based learning. When you know in advance which approach you will use, a more tailored virtual lab can bedeveloped.2.2 Virtual Lab Design DocumentLike a game design document [31], a virtual lab design document is a comprehensive plan fordeveloping a virtual lab. It outlines the virtual lab's objectives, goals, and learning outcomes,as well as the instructional strategies and pedagogical approaches to be used. The

Hands-on Laboratory ExperiencesLaboratory work in engineering typically involves the physical demonstration of scientific prin-ciples through carefully designed experiments or similar educational project activities. Two un-derlying concepts are core to the reason we use experimentation in education: 1) the scientificmethod, and 2) individual knowledge construction. The basis of the scientific method is that of experimentation. Gower [1] traces the foundations ofthe scientific method through Gallileo, Bacon, Newton, the Bernoullis, Bayes, and more. Despiteuncertainty and the probabilistic nature of experimental results, scientific knowledge is based oncertain methods, logic, and experiments. If we are to understand this scientific knowledge
